Diet and Health Programs in this area may include programs related to dietary guidelines, RDA’s, nutrient requirements throughout the life cycle, programs discussing the role and need for vitamin/mineral supplements, and programs which deal with other factors in diet (i.e., fiber, water, cholesterol, sodium). Also of concern in this area are the issues associated with food and drug interaction. Leader training and special lessons are available. Food Preparation and Substitutes Programs in this area will focus on substitutes for meats and other foods, special preparation methods (particularly as they relate to nutrient content), low-cost food planning and preparation techniques, attitudes toward food and related food behavior. Dietary preference and behavior of young children is a related concern. Self-study programs, leader training and special lessons are available. Food Safety and Home Food Preservation Use and storage of leftovers, general lessons on food preservation, drying, freezing and canning are all topics of major concern to families relative to food safety. Leader training and special lessons are available. Laundry and Treatment of Clothing to Minimize Pesticide Residue Displays, as well as leader training lessons, are a part of this program area. Special requests may be made to help solve this problem. References V. Herbert and S. Barrett, Vitamins and “Health” Foods: The Great American Hustle, G. F. Stickley Co. Philadelphia. 1981. A. J.
